Q: Can I fry without oil?
A: Most foods you can fry with little or NO oil. You will want to use a little bit of spray, butter or oil when frying eggs, especially egg whites. Starchy foods like fried potatoes or rice may require a small bit of oil also. Here are the steps to cook meat on Saladmaster without any oil:
1) Preheat the pan on medium temperature for 3-5 minutes and
2) Test cooking surface with a couple drops of water (it should bead rather than evaporate) and
3) Let meat sear until the pours of the meat loosen from the 316 Ti surface of the pan. Keep temperature to medium or just a bit higher than medium.
4) Use a metal turner rather than a plastic or wooden turn as it will more effectively “scrape” the food from the surface of the pan.

When frying vegetables, it works best to “steam fry”. Follow the above steps with a little bit of water and the lid on. Keep temp on medium (you only cook medium-click-low when you are vacuum cooking).
